Greenshell™ Mussels (Kuku, Kūtai)

Scientific name: Perna canaliculus Length: 10–15cm, reaching 23cm

They are convenient, easy to prepare and can be prepared with a wide variety of accompaniments and cooked in a variety of ways including sauté, baking, steaming and grilling or as a nourishing gumbo or chowder. Mature males have creamy-white flesh, while female flesh is apricot-orange. All specimens have a distinctive turquoise green lip.
